peanut butter stuffed french toast – vegan + air fryer friendly!

so the other day, I decided to make french toast but little did I know, we had no eggs in. This led to me thinking “well what do the eggs actually add to french toast?”, and so this recipe was born.

1. I started by preheating the air fryer at 200°

2. Then I put around 3/4 cup of almond milk in a bowl, with cinnamon and some of the MyProtein toffee FlavDrops and gave it a quick mix.

3. Next, I put a dollop of peanut butter in the middle of a slice and put the other slice on top.

4. After this, I soaked my bread in the mixture (i used brioche slices but any will be fine)

5. Then I brushed both sides with some butter (of course you can use vegan butter) and popped into the air fryer for around 3-5 minutes per side – until browning and slightly crispy)

6. Once it gets to how you like it, add your toppings! I used icing sugar and banana 🍌

protein berry fluff

so today I may have just made the most delicious bowl ever. Full of nutrients, protein, fibre – all that good stuff, while having a great taste and texture like ice cream.

how to make…

I started by adding around half a cup of frozen berries/ fruit into a high speed blender, with a cup of ice. I then added 1/2 a scoop of protein powder ( I used the MyProtein Peanut Butter Cup), along with 1/2 a tsp of xantham gum and some sweetener. I then added a splash of almond milk and blended it until smooth. Of it doesn’t go smooth straight away, stop the blender and push everything down to the blades and start it again until it’s fully, smooth and light.

to top the bowl, I crumbled some of my chocolate bliss balls (recipe coming soon!!), raspberries and coconut shavings. if you give this a go, tag me in your creations on instagram @chxr.fit ☁️
